If you love pecan pie, you’re going to love these little energy balls! It’s a simple recipe that needs just three ingredients: Medjool dates, pecans and almond flour.

I love making energy balls because they’re so easy to throw together, don’t need baking and are perfect for keeping in the fridge when you fancy a little sweet treat.

The dates and the pecans give a surprisingly good pecan pie flavour. While the almond flour helps bring everything together.

These pecan pie energy balls are the perfect easy no bake snack. And the best part is they only take a few minutes to make.

Why You’ll Love These Pecan Pie Energy Balls

Simple ingredients: Just three ingredients – Medjool dates, pecans and almond flour

No baking required: Simply blend, roll and chill.

Naturally sweet: Medjool dates give these energy balls their sweetness without needing to add refined sugar or syrup.

Perfect for prepping ahead: Make a batch and keep them in the fridge for when you need a quick snack. They freeze well too.

Lower in calories: at just over 100 calories per piece, they are a great lower calorie option if this is something you are monitoring.

Why I Chose These Ingredients

Medjool dates: dates are the perfect refined sugar free binder. Unlike refined sugar, they also contain fibre too.

Pecans:  They’re a source of unsaturated fats, including monounsaturated fats, as well as minerals such as manganese and copper.

Almond flour: It helps create the right texture while adding a little more protein, fibre and unsaturated fat.

Recipe Tips

  • Use soft Medjool dates: These blend more easily and help the mixture stick together. If your dates are a little dry, soak them in warm water for 5–10 minutes, then drain thoroughly before blending.
  • Adjust the texture: If the mixture is too sticky, add a little more almond flour. If it seems too dry to roll, blend in another date or two.
  • Add a little spice: For an extra hint of pecan pie flavour, try adding a pinch of cinnamon or a little vanilla extract. These are optional extras, as the three main ingredients work really well on their own.
  • Optional drizzle: You could drizzle the finished energy balls with a little dark chocolate if you fancy something a little more indulgent.

Storage and Shelf Life

Store your pecan pie energy balls in an airtight container in the fridge for up to one week.

They also freeze well, so you can make a batch and freeze some for later. Allow them to soften slightly at room temperature before eating.

  • 100 g pecans (1 cup)
  • 50 g almond flour (½ cup)
  • Optional pinch of sea salt

Instructions

  • Add the pitted dates, pecans and almond flour to a food processor. Add in an optional pinch of sea salt
  • Blend until the pecans are finely chopped and the mixture starts to hold together well. If it is too sticky, add a little more almond flour. If it seems too dry, blend in another date.
