I’m a big believer that salads aren’t just for summer. In fact, some of my favourite salads are the ones I make in autumn and winter where there’s a whole different selection of seasonal ingredients to work with.
Think roasted squash and beetroot, sweet potatoes and carrots all cooked up with beans, lentils, nuts and seeds. Add don’t forget a good dressing which can transform a few simple veggies into something extra special.
So, if you tend to stop eating salads once the weather gets colder, I hope this collection changes your mind. I’ve pulled together 20 of my favourite autumn and winter salads.
There are salads for easy lunches, side dishes and more substantial meals, with plenty of plant-based protein, fibre and seasonal veggies included.
And the best part? They are all simple to make and easy to store – oh and taste fantastic!

Roasted Cauliflower Salad
This Roasted Cauliflower Salad is the perfect solution for an easy lunch. Roasting really brings out the natural sweetness of the cauliflower as well as the crispiness of the chickpeas. Topped with almonds and pomegranate and finished with a turmeric tahini dressing – it's a feast for the eyes too!
This Roasted Beetroot Salad with Figs is a real celebration of late summer and early autumn flavours. The beetroot is roasted with balsamic and thyme, and served with fresh figs and crunchy maple-roasted walnuts. A simple balsamic dressing brings it all together.
This sweet potato and black bean salad is perfect for a nutritious, easy mid-week lunch. It’s all tied together with a creamy tahini miso dressing. It's a simple, nutritious dish loaded with vitamins, fibre, and plant-based protein. Perfect for meal prep too.

This Roasted Butter Bean Salad is a nutrient-dense dish that's perfect for autumn and winter. With added nutrition from vegetables like cauliflower and sweet potato, it’s full of flavour and fibre. Dressed in a honey harissa dressing it will become a firm favourite.
Number 3 in my series of Fifty Fantastic Salads is this Brown Rice Salad. Full of seasonal favourites like butternut squash and greens, it’s a great warm salad for the winter months. The dressing is easy to make and is a combination of olive oil, balsamic vinegar mixed with fresh garlic and chopped parsley.
Have you ever tried roasting lentils? This Crispy Lentil Salad with Pistachio Dressing is an easy way to try it. They really add a different texture to the dish and are really easy to make. Finished with a creamy pistachio dressing, this is a warm salad you’ll want on repeat.
Looking for a nutritious, protein-packed and easy-to-make salad that keeps you full and energised? This Pearl Barley Salad is the perfect balance of filling grains, crunchy sprouts, plant-based protein with a tangy-sweet maple mustard dressing.

If you're stuck in a bit of a salad rut, try this one. Roasted potatoes, baked chickpeas, crispy veg and a creamy satay dressing makes this one of those salads that's satisfying enough to be a meal on its own.
Number 6 in my series of Fifty Fantastic Salads is this easy Bean & Chickpea Salad. Full of easy store cupboard staples, it’s a super quick one to throw together. The roasted squash is optional but adds a real depth of flavour and an amazing colour to the finished salad.
