Watermelon Salad with Feta

This Watermelon Salad with Feta is an easy salad that combines the freshness of watermelon with the saltiness of feta. It's mixed with cucumber, olives and mint and brought together with a super simple lime-maple dressing. It can be on the table in 5-10 minutes so ideal for quick lunches or easy entertaining.

It takes just minutes to assemble, making it perfect for an easy weekday lunch. However, it’s also fancy enough to bring along to a BBQ or late summer party.

The simple lime and olive oil dressing ties everything together beautifully, with a hint of maple syrup to round out the flavours.

What ingredients do you need for a Watermelon Salad with Feta?

  • Small watermelon
  • Red onion
  • Cucumber
  • Olives
  • Feta cheese (or dairy-free alternative)
  • A handful of fresh mint leaves

Dressing:

  • Olive oil
  • Lime juice
  • Maple syrup
  • Salt and pepper, to taste

What are some of the nutritional benefits of the main ingredients?

Watermelon

Watermelon is around 90% water, so great for hydration. It’s also a source of vitamin C, Vitamin A, potassium and magnesium.

Feta

Feta is great for a hit of protein. It’s rich in calcium and contains beneficial fatty acids. Plant-based feta alternatives often include added calcium and B12, depending on the brand, making them a good swap too.

Mint

Herbs are more than just a garnish. Fresh mint contains antioxidants and trace vitamins, and its volatile oils aid digestion. It tastes amazing too!

Dressing (lime, olive oil, maple syrup)

The olive oil provides healthy fats that help the body absorb fat-soluble nutrients, while lime juice provides vitamin C. Maple syrup adds just enough natural sweetness to cut through the acidity.

Storage and Shelf Life

This Watermelon Salad with Feta can be stored in the fridge for up to 3 days.

For best freshness, store in an airtight container.

I wouldn’t recommend freezing.

Recipe Tips:

Make it vegan: Use a dairy-free feta alternative.

Add crunch: Sprinkle toasted nuts or seeds.

Swap herbs: Basil works beautifully instead of mint.

Add heat: Add a pinch of chilli flakes or fresh sliced chilli if you want a bit of a kick.

Ingredients
 

Salad Ingredients:

  • ¾ small watermelon (about 4 cups)
  • Small red onion
  • 1 small cucumber
  • 15-20 kalamata olives
  • 1 block feta cheese (or plant-based equivalent)
  • Handful of fresh mint

Dressing ingredients:

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp maple syrup
  • Salt and pepper

Instructions
 

  • Cube the watermelon into bite-sized cubes. Thinly slices the onion and cucumber and roughly chop the olives. Add them all to a large serving dish.
  • Crumble the feta and add to the bowl. Chop the mint leaves and add those too.
  • Mix all the dressing ingredients together in a small jar. Drizzle over the salad and mix well.

Notes

  • This will store in the fridge for about 3 days. I would recommend keeping the dressing separate and adding just before serving.
  • I don’t recommend freezing.
