This Watermelon Salad with Feta is an easy salad that combines the freshness of watermelon with the saltiness of feta. It's mixed with cucumber, olives and mint and brought together with a super simple lime-maple dressing. It can be on the table in 5-10 minutes so ideal for quick lunches or easy entertaining.
Cube the watermelon into bite-sized cubes. Thinly slices the onion and cucumber and roughly chop the olives. Add them all to a large serving dish.
Crumble the feta and add to the bowl. Chop the mint leaves and add those too.
Mix all the dressing ingredients together in a small jar. Drizzle over the salad and mix well.
Notes
This will store in the fridge for about 3 days. I would recommend keeping the dressing separate and adding just before serving.
I don’t recommend freezing.
