Lime & Avocado Dressing

Liven up your salads by adding this zesty avocado & lime dressing. It only takes a few minutes to make but really elevates any salad to the next level.

If you are looking to make your salad bowl a bit more interesting, give this zesty lime & avocado dressing a try.

It is so simple to make but tastes so fresh and delicious. The addition of avocado and yoghurt makes it really creamy too.

Avocado is packed with healthy fats and fibre as well as many essential vitamins and minerals. It’s a great veg to add to your diet 2-3 times per week.

I’ve used coriander as the herb in this dressing which really gives a great flavour. If coriander isn’t your thing then basil or parsley would also work well.

Nutritional Highlights:

✅ Rich in healthy fats: avocado provides monounsaturated fats that help with the absorption of fat-soluble vitamins.
✅ Packed with antioxidants: fresh coriander and lime juice provide protective plant compounds.
✅ Supports immune health: garlic contains allicin, which has natural antimicrobial and immune-boosting properties.

Most store-bought dressings can contain emulsifiers and stabilisers. They aren’t ‘food’ and are only there to help with consistency and elongate the shelf life. By making your own you can avoid them.

Lime avocado dressing

The Lime & avocado dressing is made with the following ingredients:

  • Extra virgin olive oil
  • Avocado
  • Yoghurt 
  • Lime juice
  • Fresh coriander
  • Garlic
  • Salt and pepper 
  • Water to thin

Recipe Tips

  • I’ve used unsweetened organic soy yoghurt but any plain yoghurt will do. 
  • If you prefer lemon, swap this for the lime juice.
  • The dressing will keep well in a jar with a lid for up 3-4 days if you don’t use it all.

Equipment

Ingredients
 

  • Large avocado
  • ¼ cup unflavoured organic soy yoghurt (60g)
  • 2 cloves garlic
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • Large handful of coriander
  • Salt and pepper
  • ½ cup water (125ml)

Instructions
 

  • Remove the skin and stone from the avocado. Add to a blender with all the other ingredients.
  • Blend until smooth, adding a little more water if needed.

Notes

  • If you don’t have limes, sub in lemon juice instead.
  • I’ve used unsweetened organic soy yoghurt but any plain yoghurt will do.
