Liven up your salads by adding this zesty avocado & lime dressing. It only takes a few minutes to make but really elevates any salad to the next level.

Ingredients
Large avocado
¼
cup
unflavoured organic soy yoghurt
(60g)
2
cloves
garlic
Juice of 2 limes
2
tbsp
extra virgin olive oil
Large handful of coriander
Salt and pepper
½
cup
water
(125ml)
Instructions
Remove the skin and stone from the avocado. Add to a blender with all the other ingredients.
Blend until smooth, adding a little more water if needed.
Notes
If you don’t have limes, sub in lemon juice instead.
I’ve used unsweetened organic soy yoghurt but any plain yoghurt will do.
