If you want to elevate your salads and your sandwiches, then try this gorgeous pumpkin seed dressing. It really is an amazing powerhouse of a dressing to add to your food.

It’s really quick to make; you simply blend the ingredients together and pour over when ready to serve. It makes any dish a nutritional powerhouse.

The dressing contains the following easy ingredients:

  • Fresh coriander
  • Garlic
  • Tahini
  • Apple cider vinegar
  • Salt & pepper
  • Water to thin

It’s a really good staple for lots of dishes and only takes a few minutes to blend.

The recipe makes about 4 servings and each portion contains about 7.5g of protein, so a great one to add to your salad to up the nutritional profile.

Remember most store-bought dressings can contain emulsifiers and stabilisers that can sometimes irritate the gut. If you can try and make your own, you’ll really notice a difference.

Recipe Tips

  • This is great for meal prep and will keep in a sealed jar in the fridge for up to 5 days.
  • Add the water a little bit at a time to judge the thickness of the dressing. If you prefer it thinner, then add a little more than stated (if you prefer a thicker sauce then add a little less).
  • If you don’t like coriander then you can sub out for parsley or basil.
