Pumpkin Seed Dressing

Dressings are always something that can get forgotten but really can be the main event. This pumpkin seed dressing ticks all the boxes. It’s packed full of fresh flavours and you will want to drizzle it over everything!

If you want to elevate your salads and your sandwiches, then try this gorgeous pumpkin seed dressing. It really is an amazing powerhouse of a dressing to add to your food.

It’s really quick to make; you simply blend the ingredients together and pour over when ready to serve. It makes any dish a nutritional powerhouse.

What’s so good about this pumpkin seed dressing?

Well apart from tasting amazing, it’s so full of good-for-you ingredients:

  • Pumpkin seeds are rich in healthy fats and protein as well as being high in minerals like magnesium and zinc, which can really help your energy levels as well as immunity.
  • Tahini, made from ground sesame seeds, provides is an amazing plant-based source of calcium so fantastic for bone health.
  • Coriander (cilantro) is a super herb! Full of antioxidants as well as vitamin K, it’s great for your digestion too.

The pumpkin seed dressing contains the following easy ingredients:

  • Pumpkin seeds
  • Fresh coriander (cilantro)
  • Garlic 
  • Tahini 
  • Apple cider vinegar
  • Salt & pepper
  • Water to thin

It’s a really good staple for lots of dishes and only takes a few minutes to blend.

The recipe makes about 6 servings and each portion contains over 5g of protein, so a great one to add to your salad to up the nutritional profile.

Why should you make your own salad dressings?

Well firstly, they taste so much better! You can judge what goes in them and they are a great nutritional boost to any meal.

Most store-bought dressings can contain emulsifiers and stabilisers that can sometimes irritate the gut. These additives are only there so extend the shelf life and make it look more palatable. They’re not there for your health!!

If you can try and make your own, you’ll really notice a difference in how they taste and how you feel when you’ve eaten them!

Recipe Tips

  • This is great for meal prep and will keep in a sealed jar in the fridge for up to 5 days.  
  • Add the water a little bit at a time to judge the thickness of the dressing. If you prefer it thinner, then add a little more than stated (if you prefer a thicker sauce then add a little less).
  • If you don’t like coriander then you can sub out for parsley or basil.

  • Add all the dressing ingredients to a blender and blend until smooth. This will probably take a minute or two to get fully smooth.
  • Depending on how thick your tahini is, you may need more water. Add a little more water a bit at a time to judge the thickness of the dressing.
  • Pour into a jar and keep in the fridge.
