Beetroot & Ginger Juice 

If you are looking for an easy homemade juice recipe, that is packed with goodness, this beetroot and ginger juice fits the bill perfectly. Juicing is the perfect way to get those extra nutrients into your system, without overtaxing your gut.

Juicing is a great way to get an almost instant hit of goodness.  And this beetroot and ginger juice is definitely one of my favourites! It also has carrots and apple in there for sweetness and extra nutrition.

Beetroots are one of the best vegetables to juice.  Not only are they cheap to buy (and grow!), they also give you this amazing colour and taste. And perhaps more importantly, they have amazing nutritional benefits.

Why are beetroots good for you?

Beetroots are really nutritious and have a great range of health benefits.

They are rich in essential vitamins and minerals such as folate, vitamin C, iron and potassium and are also a good source of fibre.

Their naturally high levels of nitrates help improve blood flow and can help lower blood pressure. Beetroots are also packed with antioxidants, which can help reduce inflammation and protect the body from oxidative stress.

Storage & Shelf Life

This juice can be stored in the fridge for up to 24 hours.  I wouldn’t recommend storing in the fridge longer than this – many of the benefits can be lost if you leave it too long.

You can also freeze for up to 3 months.

Recipe Tips

  • Substitutions: If you don’t like any of the ingredients (or don’t have them available) then the recipe is very flexible.  Just sub in more carrots if you don’t have apples etc. If you would prefer to, you can leave the ginger out.
  • Do I have to peel the vegetables? I don’t peel the beetroots or the carrots and apples.  Just wash well and scrub, if necessary, to get any dirt out.  
  • What about the pulp? You can use the pulp for crackers or you can compost or use for stock.

Ingredients
 

  • 4 medium beetroot
  • 2 medium carrots
  • 1 large apple cored
  • 1 thumb sized piece of ginger

Instructions
 

  • Scrub the beetroots and carrots and cut into chunks. Core the apple. Add them to the juicer with the ginger. Juice and enjoy!

Notes

  • The nutritional information is for the ingredients as stated –  it will actually be less as the fibre/pulp is not eaten.
  • This recipe serves 2 easily and can be stored in the fridge for up to 24 hours if you don’t use it all at once. I wouldn’t recommend storing longer than this as many of the benefits can be lost.
  • I don’t peel the beetroots or the carrots and apples. Just wash well and scrub, if necessary, to get any dirt out.
