Oat and Coconut Date Bars

With only 7 simple ingredients, these chewy Oat & Coconut Date Bars are a great mid afternoon snack. They don't need baking, just top with a layer of dark chocolate, finish with toasted coconut chips and refrigerate.

Although these oat and coconut date bars are full of healthy ingredients, they still taste like such a treat. 

The oats and coconut are combined with peanut butter, dates and a little maple syrup to bind them into a delicious, refined sugar free base. It is all topped with a layer of dark chocolate and finished with some toasted coconut flakes.

And what’s more, they don’t need baking, the recipe has 3 easy steps and 6 simple ingredients.

These are the 6 ingredients you need for oat and coconut date bars:

  • Medjool dates
  • Peanut butter
  • Oats
  • Desiccated coconut
  • Maple syrup
  • Dark chocolate

It’s a great one to add to your list of easy, no bake treats. They are perfect for after-school snacks or when you just need a pick-me-up in the afternoon.

Recipe Tips

  • Oats: I use organic gluten-free oats for this recipe.  Oats are naturally gluten-free but can become contaminated in the production process. Many people who are gluten-free avoid them.  Any oats will work though.
  • Peanut butter: I use quite a runny peanut butter for this recipe. If yours is a little thicker then just add a little more. Alternatively, add a little bit of water as you blend the base, so that it is soft and sticky.
  • Swaps: If you prefer another nut or seed butter then please substitute with that. Just keep the quantities the same.
  • Dates: My dates are also very soft. If yours are harder, you can add a little water as you blend. You can also soak the dates in boiling water for about 20 minutes before you use them. Drain fully and follow the recipe as written.
  • Dark chocolate: I have used dark chocolate chips in this recipe but any dark chocolate will do.  Just try and make sure it is at least 70% cocoa solids and that way it’s more chocolatey and less sugary!  
  • Toppings: For the coconut on the top, use coconut chips or more desiccated coconut.

  • Pit the dates and add to a food processor with the other base ingredients and blend until well combined and sticky.
  • Press down firmly into a lined 20cm (8 inch) square. Refrigerate whilst you melt the chocolate.
  • Put the chocolate in a bowl over a pan of warm water. Melt then pour on top of the base. Sprinkle over the coconut chips. Refrigerate again until the chocolate is set and cut into bars.

Notes

  • I like to store these bars in the fridge so they stay nice and hard.
  • They will last for up to a week in the fridge.
  • I don’t soak my dates as I use very soft ones. If yours are harder, soak in boiling water first.
  • You can use coconut chips or desiccated coconut for the topping,
  • .Almond butter can be subbed for peanut butter, if preferred.
