With only 7 simple ingredients, these chewy Oat & Coconut Date Bars are a great mid afternoon snack. They don't need baking, just top with a layer of dark chocolate, finish with toasted coconut chips and refrigerate.
Pit the dates and add to a food processor with the other base ingredients and blend until well combined and sticky.
Press down firmly into a lined 20cm (8 inch) square. Refrigerate whilst you melt the chocolate.
Put the chocolate in a bowl over a pan of warm water. Melt then pour on top of the base. Sprinkle over the coconut chips. Refrigerate again until the chocolate is set and cut into bars.
Notes
I like to store these bars in the fridge so they stay nice and hard.
They will last for up to a week in the fridge.
I don't soak my dates as I use very soft ones. If yours are harder, soak in boiling water first.
You can use coconut chips or desiccated coconut for the topping,
.Almond butter can be subbed for peanut butter, if preferred.
