Blended Blueberry Puddings

These easy blended blueberry puddings are a great option if you get put off by the texture of chia seeds. These little seeds are a nutritional powerhouse. They are high in fibre, high in protein and full of essential fatty acids. Great for prepping in advance for easy breakfasts.

If you don’t like the texture of chia seeds but still want all the benefits, try these blended blueberry puddings instead! They are full of flavour and packed with protein and fibre. Each pudding has over 12g of fibre and about 15g of protein, so an amazing way to start the day.

Chia seeds are full of vitamins and minerals and are a great source of omega 3 fatty acids and fibre, so a great addition to any diet. But I understand that many of you can be put off by the texture of them once soaked. By blending them, you can avoid that.

They are a great one to add to your meal prep rota and will store for a few days in the fridge. 

What ingredients do you need for blended blueberry pudding:

  • Chia seeds
  • Soya or almond milk
  • Banana
  • Blueberries
  • Toppings of choice

I’ve added yoghurt, pistachios and some fresh blueberries to top them, but add any toppings you like. 

Why use soy milk and yogurt?

I like to use organic soy milk and top with soy yoghurt as it’s very high in protein compared to other plant milks/yoghurts.  Just make sure you buy an organic one (and unsweetened too). Soy plants can be heavily sprayed with pesticides so it’s important if you going to consume it to buy organic.

However, if soy isn’t your thing, feel free to use any milks or yoghurts you prefer. 

When to have these blended blueberry puddings?

These puddings are great for breakfast, but you can also have them as a dessert.  They don’t take very long to prepare; you just need a bit of time to let the chia swell up and soak up all of the liquid.

They are great for meal prep too; you will have ready-made breakfasts for the week ahead.

Storage & Shelf Life

Once jarred up with the toppings, they will last for 3-4 days in the fridge.

A great one to meal prep ahead.

I don’t recommend freezing.

Recipe tips

  • Feel free to sub in your favourite fruits if blueberries aren’t your thing or aren’t available.  Any berries work well.
  • You can use frozen or fresh fruit.
  • If you haven’t got time to wait overnight, then they can be ready in an hour or two.  The texture just gets firmer the longer you leave them.

Equipment

Ingredients
 

Base ingredients:

Toppings

  • ½ cup organic unsweetened soya yoghurt (125g)
  • Chopped pistachios
  • More blueberries

Instructions
 

  • Add all the base ingredients to a blender and blend for 20-30 seconds or until smooth.
  • Pour into 3 serving glasses or jars and leave to set for at least 2 hours or overnight in the fridge and then add any toppings.

Notes

  • The nutritional information is based upon organic unsweetened soya milk and unsweetened soya yoghurt.

    I don’t usually enjoy chia seeds in this style of dish, but I really liked it made this way.
