These easy blended blueberry puddings are a great option if you get put off by the texture of chia seeds. These little seeds are a nutritional powerhouse. They are high in fibre, high in protein and full of essential fatty acids. Great for prepping in advance for easy breakfasts.
Add all the base ingredients to a blender and blend for 20-30 seconds or until smooth.
Pour into 3 serving glasses or jars and leave to set for at least 2 hours or overnight in the fridge and then add any toppings.
Notes
The nutritional information is based upon organic unsweetened soya milk and unsweetened soya yoghurt.
Feel free to sub in your favourite fruits if blueberries aren’t your thing or aren’t available. Any berries work well.
If you haven’t got time to wait overnight, then they can be ready in an hour or two. The texture just gets firmer the longer you leave them.
They will last for 3-4 days in the fridge, once jarred up with the toppings, so are great for meal prep.
