Easy Air-fryer Coconut Crusted Tofu

This Easy Air-Fryer Coconut Crusted Tofu is a fantastic option for easy lunches! The coconut really adds a great flavour and crunchiness. And in the air-fryer they only take 10 minutes to cook!

This easy air-fryer coconut crusted tofu is the perfect easy lunch or dinner idea.  Very simple ingredients and ready in just 20 minutes.  

As we all know, tofu can be a bit bland without any flavouring. The coconut really adds a great flavour and texture.

Tofu is coated in cornflour, dipped in milk and rolled in desiccated coconut with a touch of seasoning before being air fried. The result is a crunchy coating that keeps the tofu tender inside. It’s quick to put together and is a great protein-rich option to add to salads and rice bowls.

Recipe Tips

  • If you don’t have an air fryer, you can easily pan fry or put in a regular oven.  You may just need to cook for a little longer.
  • Make sure you use your hands to get the coconut to fully cover the tofu. It gets a bit messy but it’s a great one to do with the kids if they want to help in the kitchen!
  • If you want a spicier taste, then add in a tsp of paprika and a pinch of chilli powder to the coconut mix.
  • They also work well as a curried coconut crust. Add 1 tsp of curry powder to the coconut mix and cook as before. They are really delicious dipped in a combination of plain yoghurt and mango chutney.

Ingredients
 

  • Large block of firm tofu (400g)
  • 2 tbsp soy milk
  • 4 tbsp cornflour
  • Salt and pepper
  • cup desiccated coconut (55g)
  • Spray of olive oil

Instructions
 

  • Firstly, if you have a tofu press – press your tofu. If not, use a tea towel or paper towels to pat dry.
  • Cut the tofu into triangles (about 1 cm thick). Put the milk and cornflour in one bowl and mix well. Put the coconut and some salt and pepper in another bowl.
  • Dip the tofu into the cornflour mix and then into the coconut to coat each piece. Spray with oil and then air fry for 10 mins at 180C /350F turning once.
