This Easy Air-Fryer Coconut Crusted Tofu is a fantastic option for easy lunches! The coconut really adds a great flavour and crunchiness. And in the air-fryer they only take 10 minutes to cook!
Firstly, if you have a tofu press - press your tofu. If not, use a tea towel or paper towels to pat dry.
Cut the tofu into triangles (about 1 cm thick). Put the milk and cornflour in one bowl and mix well. Put the coconut and some salt and pepper in another bowl.
Dip the tofu into the cornflour mix and then into the coconut to coat each piece. Spray with oil and then air fry for 10 mins at 180C /350F turning once.
Notes
If you don’t have an air fryer, you can easily pan fry or put in a regular oven. You may just need to cook for a little longer.
If you want a spicier taste, then add in a tsp of paprika and a pinch of chilli powder to the coconut mix.
They also work well as a curried coconut crust. Add 1 tsp of curry powder to the coconut mix and cook as before.
