If you are in an energy slump and looking for a nutritious pick-me-up, these super green power balls are just the thing. With 6 simple ingredients and taking minutes to prepare, they’ll hopefully become your go-to snack!
Pit the dates and add to a food processor with the pistachios, cashews, pumpkin seeds and matcha powder. Blend together until smooth. Add in 1-2 tbsp of water as you blend (you'll only need this if your dates are harder or if it won’t come together into a soft ball).
Roll into 12 balls and refrigerate whilst you melt the chocolate.
Melt the dark chocolate in a bowl over a pan of hot water. Dip each ball in the chocolate. Top with some extra chopped pistachios. Refrigerate to set.
Notes
I use a vegan, 70% cocoa solids dark chocolate.
To help to coat the balls with the chocolate more easily, add an optional 1 tsp of coconut oil to the melted chocolate.
Store in the fridge, they will last for 8-10 days.
