Looking for a healthy twist on a classic treat? These vegan, homemade Toffifee are easy to make, packed with nutrition and make the perfect homemade gift.
Add 1 cup of hazelnuts and the pitted dates to a food processor and blend until smooth. If your dates are hard try adding a tbsp or 2 of water as you blend.
Divide the mixture into 18 and roll into balls. Place into a mini cupcake tray (or cases). Make an indent into the centre of each ones (with the handle of a wooden spoon). Put a whole hazelnut into each one.
Melt the chocolate in a bowl over a pan of hot water. Once melted, pour a spoonful of melted dark chocolate into each cup. Refrigerate to set.
Notes
I use a vegan, 70% cocoa solids dark chocolate.
Try to use very soft medjool dates that don’t need pre-soaking. If you have to soak the dates the texture may be too soft.
